Objective:
To prepare high soluble dietary fiber (SDF) content DF(dietary fiber) from citrus peel and dregs derived from citrus processing industry, study characteristics and physiological functions of the prepared dietary fiber (DF), and establish fermentation method for high quality DF.
Approach:
Fermentation method was adopted to enhance the content of SDF and prepare high quality DF. The fermentation isolate was selected from cellulose enzyme producing microorganisms, the nutritional conditions based on citrus peel and dregs were optimized, and the cultural parameters were ascertained under the guideline of SDF content and the characteristics of TDF.
